The Mustang II is a Mustang too!
The Monte is going to be hard to work with. The trunk has snapped clean off, and I almost think you'd be better off painting a white #3 on each of the doors and pancaking the trunk in some more. Make it look like Earnhardt spun out and pounded the wall trunkfirst. All you need to do to pull that off (aside from racing decals) is to glue the trunk back on at an angle roughly vertical with the rear window (which should be smashed out).

As for the Pontiac, this will be tricky but will look awesome if you pull it off. Cut the hood line where it meets the front fascia (but do not cut it off from the passenger side of the car) and ever so gently with plyers, bend the hood up (so it's at about a 30 degree angle from wher it had been previously) then tug on the driver's side of the hood and very gently bend that back down, while keeping another pair of plyers under the passenger side of the hood. The desired result will make it look like the car was hit in the (missing) driver side front fender and buckled the hood too.

If the hood breaks, however, just cut the whole rest of the front fascia off (but leave the passenger side front fender), then remove the front wheels and fill the gap with tires or other parts.

I was wondering if I cut all the back end off the Monte Carlo if it will look like a cool wreck? Great Pontiac Idea!!!

Actually, you just gave me a different idea for the half-Monte.

Remove the trunk piece entirely, remove the window piece, break the hood scoop off, try and slide a motor in under the hood, and put headers up (or use a JL Spoilers motor like the demo derby wagon) and turn into a pre-ran derby car. You'll have to ding up the front and sides a bit too but that'll be fun! ;)
